You want fresh-from-the-oven biscuits with this morning’s eggs, but not enough time, so you grab the box of biscuit mix. Pancakes for dinner? Yes, please. There’s a box for that too. Every grocery store offers an aisle of these mixes. But, here’s a little secret… those mixes are over-priced and over-processed. Read the ingredient list. Look at the price tag. You’ll see what I mean.Try this instead. Make an all-purpose baking mix of flour, leaveners, and salt in a big batch, and use that for the dry ingredients in everything from those biscuits and pancakes to cookies and muffins, too!When you compare general recipes for these treats, you’ll see flour, baking soda, baking powder, and salt in all of them. Exact amounts often differ, but general ratios like flour to leaveners are similar.There are two main differences between, say, biscuits and pancakes. Most importantly, the wet ingredients, like fat and sugar, determine sweetness and texture. But another important factor is how the ingredients are brought together and cooked. Lightly mixed biscuit batter goes in the oven, while whisked pancake batter sizzles on the griddle. Procedure plays a big role in the final product.Keep in mind - this mix will not make your favorite cookie. Re-creating something specific requires you follow that recipe exactly.
